Perrier Rickey

1 1/4 cups Perrier, divided
1/2 cup sugar
3 oz. blood orange juice
3 oz. Meyer lemon juice (or grapefruit)
1 1/2 oz. simple syrup*
8 dashes Angostura bitters

*To make simple syrup: Place 1/2 cup sugar and 1/2 cup Perrier in a small saucepan. Heat over medium-high heat until the sugar is completely dissolved (about four minutes). Pour into a glass and chill in refrigerator. (There may be simple syrup left over.)

Once syrup is chilled, stir together the juices, simple syrup, bitters, and remaining 3/4 cup Perrier. Divide the mixture between two Champagne glasses. Garnish with a citrus twist. Makes two drinks.
