Cabernet Sauvignon | ALVARO PALACIOS
Priorat Commitment
by
Anthony Dias Blue
The word cims means “summit” in Catalan, and indicates the steep vineyard location where the grapes for this wine originate. This very age-worthy wine relies more heavily on the hearty Cariñena grape than on Grenache, with a small percentage of Cabernet Sauvignon added to the blend. All the grapes are hand-harvested and given a long maceration. The resulting wine is aged for 17 months in new French barrels. It has fresh, lively texture and smooth blueberry fruit. The long, rich finish is loaded with sweet oak.
