There are hotel bars and theme bars (tiki anyone?). Why not the hotel as theme? In Chicago, check into Motel, a swinging downtown nightspot predicated on the mood of the ’60s roadside motel — think Palm Springs indie inn versus the Red Roof version, and you’re on the right eight-track. It’s not all Rob Roys beside the (tabletop) shuffleboard court at Motel. The room-service-inspired menu delivers artisanal grilled cheese and fried chicken and waffles. Vacancies now.
