BOURBON PRIMER


Here are the criteria that make Kentucky Straight Bourbon different from whiskey produced everywhere else (and it just so happens to be law in Kentucky).

ONE:
It must contain 51 percent corn mash.

TWO:
It must be distilled at no more than 160 proof.

THREE:
It cannot go into the barrels at higher than 125 proof.

FOUR:
It must be aged for a minimum of two years in charred new white oak barrels.
