by Neal Webster TurnageLocavore 2.0 is officially here. Of-the-moment restaurants and cafés were once all about procuring produce from nearby farms or those within a relatively close radius. Now they’re getting it from the neighbors. It’s called foraging. In one scenario, chefs go out and forage the nearby land for edible goodies. In another, the
chef issues a harvest call, and folks who live nearby bring in the booty from their backyard. After some culinary alchemy is performed — voilà! — out come daily specials bursting with just-picked flavor. “For us, it’s about finding new ways to see how we literally ‘produce’ the things that define community,” says Eugene Ahn, of
Forage in
Los Angeles. “When neighbors exchange tomatoes, the gesture is invisible. When a restaurant is the intermediary, the community value is apparent in a unique way.” Here are a few places from around the country that have gotten in on the act.
