Muscat. The best-known of these fortified Muscats are the vins doux naturels from the South of
France, such as Muscat de Beaumes-de-Venise. Like his southern French counterparts, Quady fortifies Essensia to about 15 percent alcohol, a process which kills the yeasts and arrests the fermentation process, leaving the ripe, grapy flavors intact. The result is a wine that’s rather high in alcohol but still retains its freshness. Aging three months in French oak adds another dimension to Essensia.
