In the Pacific Northwest, the Fairmont Olympic Hotel is considered

Gavin Stephenson prepares a five-star, four-course
Thanksgiving meal including turkey with corn-bread stuffing,
homemade cranberry sauce, and a selection of delicious pâtés as
appetizers. Of course, what would Seattle be without fresh salmon?
For those who want to forgo turkey, the Georgian room offers other
entrées, including seared filet of wild salmon with vegetable
ragout and truffles. Price: $95 for adults and $30 for
children.

When the Pump Room opened in 1938, it quickly became the hangout of
Broadway and Hollywood stars on their way across the country by
train. Its host hotel was a favorite place in
Chicago for Frank
Sinatra, and a booth in the Pump Room bears his name. With its
crystal chandeliers, beveled mirrors, and luxurious fabrics, the
majestic ambience of the restaurant makes for an ideal Thanksgiving
setting. Executive chef John Geschrei and sous-chef Daven Wardynski
deliver a memorable feast in three courses. A sampling: filet of
beef tartare, Pump Room salad, wild rice and mushroom soup,
Wisconsin wild turkey with corn-bread stuffing, hazelnut
cauliflower, cranberry fois gras glaze, and classic pumpkin-pecan
cheesecake for dessert. Price: $79 for adults and $39 for
children.
