The soft ocean breezes are right, so who says you’re not in the Mediterranean? Not Fantino, the fine dining Italian eatery at the Ritz Cancun. Built on the talents of chef Matias Martinez, newly imported from Barcelona, the menu features bread salad, truffle and porcini risotto, and grilled scallops in almond emulsion. Ceiling frescos, Frette linen-covered tables, and silk walls dictate decorum.

The ambitious new Kura Hulanda, a reclamation of eight Dutch Colonial blocks, harbors Astrolab, named for the restaurant’s collection of early astronomical instruments on display both inside and outside in the marble garden. The stunning surrounds are happily matched to fine fare under the direction of Austrian chef Harald Klement. Expect creativity with fish and meat, as in tomato-cashew-sauced snapper and tamarind-glazed pork loin.
