What’s in a name? Often the same ingredients. Twenty years ago, when bartender Tom Ho of the El Bizcocho restaurant in the posh Rancho Bernardo Inn in San Diego came up with a drink called “Southern Champagne,” the cocktail, not the name (which meant nothing to Californians), became a signature item. Eventually, upon the urging of regulars, Ho changed the drink’s name to reflect its origins, and it became the El Biz Fizz.


1 oz. southern comfort
1 oz. amaretto
1/2 oz. grand marnier
juice of half a lemon
3 oz. piper heidsieck brut champagne
fresh currants or lemon twist

in a tall glass, pour southern comfort, amaretto, grand marnier, and lemon juice, then fill with champagne. stir with a swizzle stick and garnish with fresh currants or lemon twist.
